Ingredients of basic Ice Creams

Fruit Ice Creams - sorbets

  • Due to their separate production from other creamy ice creams, all sorbets do not contain gluten, milk, eggs, nuts, peanuts, sesame, soy, even in trace amounts.
  • Ingredients of all sorbets: fruit by type 30%, water, sugar, glucose, grape sugar, lemon juice, carob. Some sorbets also contain chicory fibre.
  • Basic types of fruit sorbets offered: lemon, mango, passion fruit, peach, strawberry, raspberry, berries, blueberry.
  • Some types of fruit sorbets are only available at certain times of the year, depending on the availability and quality of the fruit from which they are prepared.

Cream Ice Creams

The fat content of all cream ice creams is approximately 7-8 %.

Healthy Ice Creams without added sugar

  • Healthy salty peanut: milk, milk powder, egg yolks, peanuts, stevia and steviol glycoside-based ingredients, sea salt, carob.
  • Healthy pistachio: milk, milk powder, egg yolks, pistachios, stevia and steviol glycoside-based substances, carob.
  • Healthy nougat: milk, milk powder, egg yolks, hazelnuts, cocoa, stevia and steviol glycoside-based substances, carob.

Carob (carob meal) is the kernel from the seed of the carob tree, which has pods as fruits called carob pods. In ice cream it acts as a purely natural stabiliser.

Milk powder is used in ice cream not to save conventional milk but to balance the fat to dry matter ratio.

Glucose is a simple sugar that is used in sorbets to regulate and properly balance the properties of sugars. Grape sugar is also added to almost all ice creams for similar reasons.
